Glazed Lemon Chicken

Ingredients

  • 1 lb chicken breast, cut into cubes
  • Adobo seasoning
  • Salt and pepper
  • Soy sauce
  • Oil for frying
  • 1 lemon, juiced
  • 1/2 lemon, thinly sliced
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon honey
  • 1 teaspoon starch

Instructions

  1. Season the chicken breast cubes with adobo, salt, pepper, and soy sauce.
  2. Heat some oil in a frying pan and fry the chicken until slightly browned.
  3. In a separate bowl, mix together the lemon juice, thinly sliced lemon peel, rice wine vinegar, brown sugar, honey, and starch to make the sauce.
  4. Remove the chicken from the frying pan and set aside.
  5. Clean off the excess oil from the frying pan, then add the sauce to the pan.
  6. Bring the sauce to a boil and let it simmer for a few minutes until it thickens.
  7. Add the chicken back into the pan and cook it with the sauce for a minute or two, until the chicken is fully cooked and coated in the sauce.
  8. Serve hot with your favorite sides.
